was very keen to know about Indian curries and on my recent visit to West LA, I happened to meet Mr. Paviter Handoo, who is representing a chain of Indian Restaurant in west LA. Mr.
Handoo informed me that the Cuisine of India is characterized by its sophisticated and subtle use of many spices & vegetables grown across India. India's religious beliefs & culture has played an influential role in the evolution of its cuisine. However, Indian's cuisine also evolved with the subcontinents cross-cultural interactions with neighboring, middle east and Central Asia. The diverse climate in the region had also benefited the Indian cuisine: Northern, North India cuisine is distinguished by high use of dairy products, eastern, Desserts, Southern, Rice, Samber and Rasam & Western, Rise, coconut, & sea food.
